For newly produced movies from Hong Kong, or do we simply use China for everything now?

I'd say stick with Hong Kong.  It's pretty much in the same status it always was (formerly a dependent territory), though it has changed ownership.  Still issues its own stamps, etc. and acts like an autonomous entity.  Under the Basic Law, it's independent except for foreign affairs and defense.
