When restoring the data from a backup simply choose to do a "Partial Restore".
This will restore only those profile you had when doing the backup and leave all later additions untouched.
It all seems so stupid, it makes me want to give up!
But why should I give up, when it all seems so stupid?

If all else fails, you might try using plugins. With CSVExport, you can export your notes from a old backup. You need only two columns - profile id and notes.

Then with Bulkedit, you can import the notes back into your latest database. Profile id is used as the key to make the profile updates. Use the Import Personal Data feature.

Hopefully you will find a simpler method, such as the one Lewis mentioned, but those plugins are there if you need them.
Thanks for your support.
